Chicken Soup for the Soul....

A few weeks ago,  I made a super simple Chicken Crock Pot Soup.  Full of simple, whole food goodness and very easy to make.  Here's what I did:

  • 1 container of Trader Joe's Free Range Chicken Broth
  • 4-6 additional cups of water (depending on how thick you'd like the consistency of your soup)
  • 5-6 carrots, diced, grated or sliced
  • 1 bunch of celery, diced or sliced
  • 1 onion, diced, grated or sliced
  • 1 package of Trader Joe's Organic Free Range Chicken Legs (frozen)
  • Sea salt and seasonings to taste
  • 1 can of organic corn (if desired)


I diced, sliced and poured all ingredients into my crockpot mid-morning and turned the crockpot to low heat.  Several times throughout the day, I checked and stirred.  Shortly before serving, I searched for the chicken legs in the soup, pulled them into a side bowl and removed all the bones and cartilage and returned the meat to the soup.  With a fork I separated hunks of chicken and stirred into the soup.  

Delicious and nutritious.   Feel free to experiment with different vegetables.  Red peppers and garlic would be other delicious options.
